CAB-RON reaches its peak in the Bodegas-Catedrales de Jerez, where it matures in ex-Oloroso, ex-Bourbon and ex-Pedro-Ximenez casks. The result is a mahogany-colored rum with a fresh spicy aroma and gentle notes of liquorice.
